Made by literally cutting to cordon (arm) of the vine to stop the nutrients flowing the grapes still hanging. They slowly dehydrate and concentrate the sugars, acids and flavours inside the skin. This is a tangy, exotic and voluptuous wine of multiple layers and plenty of harmony. It’s acidity means it is not so sweet that you couldn’t enjoy a second glass (and by then you have almost missed the half bottle so a third is in order). Aging is possible but unnecessary and it will marry with fresh fruits, pavlova, soft cheese and much more.
Clare Valley – One of the great wine regions of Australia. Known for its boney, citric Rieslings that build flesh with bottle age – a classic Australian style. It can also make some lovely Shiraz and Cabernet.
Riesling – One of the world’s most noble varieties and known transmitter of terroir. Riesling is an important variety for quality wine production although only makes up approximately 4% of the planted area. Wonderful wines are found in Germany, Austria, Alsace and Australia.
