What a wealth of great wines we have in this country that we don’t full appreciate. This is a wine that took 20 years to make and is selling for about one third of what it is really worth. But don’t let that stop you, so many great flavours of raisins, plums, prunes, flint, citrus rind, floral, grapes, white chocolate… It really changes every time you smell it. The palate is quite sweet but savoury and dense at the same time. The flavour lingers for a long time. Truly complex and lovely to drink.
Topaque – Made from Muscadelle which is reminiscent of the Muscat grapes but not related. Topaque used to be called Tokay and is a style of wine unique to Australia and generally Rutherglen. It is a fortified wine that ages in the warm cellars that slowly oxidises and cooks the wines which creates their unique flavours. Once bottled they don’t improve with age but they can be opened and enjoyed over 6-12 months easily.
