Description
What an amazing wine. It uses organically grown sundried Margaret River Cabernet from a single block to make an Amarone style wine of great impact and intensity. Handpicked and air-dried which concentrates the flavours of the fruit, giving it a more powerful edge. Bernard definitely tastes like Cabernet but with everything turned to 11. That means everything is equally balanced and therefore you have a wine of harmony. You simply have to taste this to believe the wine. I suggest some 70% dark chocolate to tame the beast. Better still would be 10 years or so in a good cellar.
A family run estate in Margaret River. They have two biodynamic sites in the region. Run as wholistic farms which include bees, vegies, chickens and tree conservation. The wines here are great. Full of flavour, made with love, and very easy to drink.
Margaret River
Three hours South of Perth is this land of Cabernet and Chardonnay. Right on the ocean the climate allows the grapes to mature slowly on the vine. The wine are more powerful in the North and more elegant in the south. The best wines are world class and are priced to reflect this.
Cabernet Sauvignon
The noble variety of Bordeaux’s left bank. Firm tannins, a streak of acidity and punctuated by flavours of cassis, violets, spice and leather. The best examples can age for the long term. Often blending with Merlot, Cabernet Franc or Shiraz will fix the hole Cabernet has in its middle palate.
