What happens if you take your homage to conventional Clare Valley Riesling and leave some residual sugar in it? Why you’ve just reinvented the wheel. David took a portion of his 2013 Watervale during ferment and stopped it with a comparatively small 15 grams per litre of sugar. The results are amazing. Gone are the hard angles of young, dry Clare Riesling and here is an aromatic, textural and complex butterfly. It still finishes dry but the flavour profile has improved beyond comprehension. It makes it a star for matching with dishes that offer hot spices and aromatic herbs. This wine will age 10,15, 20 years. Just buy as much as you can afford and forget about them.
Clare Valley – One of the great wine regions of Australia. Known for its boney, citric Rieslings that build flesh with bottle age – a classic Australian style. It can also make some lovely Shiraz and Cabernet.
Riesling – One of the world’s most noble varieties and known transmitter of terroir. Riesling is an important variety for quality wine production although only makes up approximately 4% of the planted area. Wonderful wines are found in Germany, Austria, Alsace and Australia. They can be as dry as any wine you’ll taste or super sweet and luscious. It is a wonderful grape. See more about Riesling here.
