10 hectares of certified organic Clare Valley vineyards provide the raw materials for Stephanie Toole to make her lovely wines. There is a care and attention that is evident in the glass when you taste these wines.
Rich, dense and silken Shiraz. This is a classy and elegant wine that shows the breadth that Clare can offer in the right hands. White pepper and some savoury notes really round out this wine. The richness of the palate is beaten into submission but some lovely tannins. Will improve over time in a good cellar. Right now I’d match it with roast lamb.
Clare Valley – One of the great wine regions of Australia. Known for its boney, citric Rieslings that build flesh with bottle age – a classic Australian style. It can also make some lovely Shiraz and Cabernet.
Shiraz/Syrah – A bit of a chameleon, Shiraz can change how it looks depending on terroir and/or wine maker influence. The Syrah based wines of Northern Rhone are dry and austere while the Shiraz of Barossa is rich and fleshy. A variety that lends itself to long aging but can be drunk at any time of its evolution.
