Description
A dry cider Nérios is powerful, tannic and surprises with its alcohol content of more than 7°. A copper color, fine bubbles, and slight caramel, licorice, vanilla on the palate with a hint of bitterness on the finish. Perfectly accompanies a rabbit braised in cider, pineapple pork, walnut salad , roasted chestnuts, cheese. Cool to 12° for drinking.
Johanna & Louis Cecillon purchased 11 Ha of apple orchards in 2011. Johanna’s family are from Brittany and have been cider makers for generations. Louis comes from a long line of vignerons based in St Joseph. In fact, he is the nephew of the great Jean-Louis Grippat. Louis followed his wife to Brittany bringing with him his winemaking sensibilities and an old wine press purchased by his family in 1933. They work their orchards organically and by hand, fermenting each of the 15 apple varieties separately before blending and bottling them into three different cuvees.
Cider – The product of fermented apples. They can range from simple to complex and bone dry to super sweet. The best examples can rival table wine for interest and style. France, Spain, England and Australia are all known for cider production.
