Exclusive cask-bottling for Australia, UK and US. Drawn from butt in July 2015 this wine spent four and a half years under flor before being bottled en rama. En Rama in this context means ‘raw’. Going straight from cask to bottle without filtering or fining. En Rama is an experience as close to drinking Manzanilla straight from the cask as you get in Australia.
This is a beautiful wine: Briny, tangy acidity, lingering flavours and some texture elements. Manzanilla does its best work when icy cold and if you can grab some oyster or jamon because Manzanilla the perfect match to both. Mostly you want to be drinking your Manzanilla young and fresh, however the Navazos team say En Rama styles evolve and change with time. Drink from now until, well, who knows! The classic match for Manzanilla is Jamon or oysters, while there are other options it is hard to go past these matches.

Started by a group of rather passionate Spanish Sherry lovers led by wine writer and Sherry guru Jesús Barquín. The concept behind Equipo Navazos (Team Navazos) was to select specific bota (cask/s) of such wines for individual bottling, unfiltered or lightly filtered. Initially intended for a select group of friends and professionals the project was too good not to share. A variety of styles from several bodegas are bottled in limited numbers. Carrying the name “La Bota de….” (the cask of…). Stated on the label is the date of each saca (racking) hence making a solera equivalent of a vintage.

D.O Jerez

The south western town that is responsible for Sherry. Sherry is a fantastic product that uses local conditions, the ‘Solera’ fractional blending system. In some styles the unique Flor yeast that grows on the top of the maturing wine to craft a wine that cannot be replicated anywhere in the world. They range from young to quite old and dry as dry can be to luscious and sweet. Dry Sherry is made with Palomino Fino, sweeter wines use Pedro Ximenez (PX) and Muscat of Alexandria (Moscatel).

Palomino Fino

The main variety of Sherry production. It grows in the chalky white albariza soils. Which gives a dry, acidity, minerally and faintly aromatic base wine to craft into works of Sherry art.  Used for Fino/Manzanilla, Amontillado and Oloroso production.
