Modus Operandi Sonic Prayer IPA is my kind of dank. Grainy, caramel, sweet hop, green, grassy, herbaceous, floral. A hint of funk too. The palate has the sweet caramel on the start and melds back into the herbaceous finish. The body on Modus Operandi Sonic Prayer IPA is generous. I find this beer quite complex and incredibly moreish. A real wine drinkers beer.
Started in 2012 after our husband and wife team spent 6 months of touring the USA to delve into the craft beer revolution. The MO is great beer with no short cuts. That means flying yeast in from the USA, scouring the globe for the best ingredients, and especially, keeping the beer cold from the moment it is packaged. The beers are great. The Sonic Prayer was a real find, the Former Tenant is in my top handful of beers ever. Therefore, you need to buy some cans and find out what the fuss is all about.
India Pale Ale or IPA started in England. They were essentially a Pale Ale with more. More hops, more bitterness, more malt and more alcohol. Like the English style Pale Ale, they were dry, malty, and cleansing. Now, IPA is a launching pad into pandora’s box wrapped in an enigma and somethings also wrapped in pancetta. American style IPA often focus on hops flavours and sometimes alcohol. But really, the only limit to IPA is the brewer’s imagination.
