Description

A stunning wine, concentrated, great depth of fruit, silky, plush with big fruit tannins and a long finish. Just a baby and in need of 15 years in the bottle to really flourish. Match it wine roast beef.
Cerretta is a vineyard run with organic and biodynamic methods. South East facing, 250-350 meters above sea level. It receives long fermentation of up to 35-40 days. The cap is submerged a couple of times to extract more tannins. Maturation in 2500 to 5000 litre slavonian vats for 36 months.

Baudana owns just 4 hectare of vines in two of the great Serralunga vineyards. In 2004 they entrusted the Vaira family (who make the awesome Vajra range) to take over tending their vines. The quality of fruit from this part of the appellation made it a no brainer for Aldo to accept. To honour the Baudana family and the terroirs he keeps the wines completely separate estates. These vines are also tended organically or biodynamically.

Piedmont – Known as one of the greatest wine regions in the world, its name literally means the ‘foot of the mountain’. Piedmont located in the North Western reach of Italy. There are a lot of parallels drawn between the best wines of Piedmont (Barolo and Barbaresco) and the wines of Burgundy. The region neighbours France and Switzerland with its border defined by the Alps to the north and west and Apennines to the south. These natural defences were used to keep the Ligurians safe from Roman invasions. Luckily it didn’t work forever, as we may not have the wines that we cherish today.

Barolo DOCG – Made from 100% Nebbiolo aged for least 3 years (5 for Riserva). Famous villages include La Morra, Verduno, Castiglione, Montforte, Serralunga and Barolo. Awarded DOCG in 1980.

Nebbiolo – Famously producing long lived red wines which are light of colour, but abundant in tannin from Barolo, Barbaresco and various other local wines. This is the variety that defines the region. Typical flavours include: Tar, roses, anise, cherry, blackberry and truffle.
