Le Timbre FleurTropicale Winter release. Jasmine says “Handpicked and wild fermented as always. A juicy blend of Riesling from Whitlands, Pinot Noir from Sunbury and Cabernet from Macedon. Fermented and aged in puncheon for 12 months. Racked by gravity and bottled in April 2020 with no additions except for a whisper of sulphur (30ppm). Unfiltered and unfined as always.

Initially, Le Timbre FleurTropicale is full of spice, smoke, red, sweet plums, five-spice cinnamon/ginger. The palate is juicy. spicy, silky, crunchy red apples, just a hint of grip. Mineral edge. It softens and brightens with time open. This is a wine to drink, it is glorious.

Le Timbre is made in a small shed surrounded by an acre of vines in Keilor, Melbourne Australia. Jasmine’s style is wine with minimal additions, emphasizing purity of fruit, lively acidity and bright, ripe texture achieved by the use of oxygen and lees contact. Everything is wild fermented, unfiltered and unfined. The results are always stunning. Understated but somehow with a huge presence. And wines that I’ve always regretted not getting more of as I drink my last bottle.

Sunbury

Sunbury is close to Melbourne and known for Shiraz. The cool, dry climate allows Shiraz to slowly ripen and show off the amazing white pepper and dark fruits it is known and loved for. Craiglee if by far the most famous producer of the region. But there is a long history of great wine from the area, dating back to the 1800s.

Macedon 

A wholly underrate region in Australia. With a handful of extremely passionate but miserably small producers, it is not surprising that those who know don’t really share the knowledge. Outstanding Chardonnay, Pinot Noir and sparkling wine is made here with a few braving some other varietals too

Riesling

One of the world’s most noble varieties and known transmitter of terroir. Riesling is an important variety for quality wine production although only makes up approximately 4% of the planted area. Find wonderful Riesling in Germany, Austria, Alsace and Australia. They can be as dry as any wine you’ll taste or super sweet and luscious. It is a wonderful grape. See more about Riesling here.

Pinot Noir

This is the most elusive grape. It is relatively early ripening and extremely sensitive to terroir. Its perfect place on earth is the Cote d’Or in Burgundy. So haunting are great red Burgundy’s charms that growers everywhere try to emulate them. Pinot Noir is not just a one-trick pony, it can make great reds, rosé, sparkling and even sweet wines, whites on occasion and I’ve tasted a decent fortified Pinot Noir too.

Cabernet Sauvignon

The noble variety of Bordeaux’s left bank. Firm tannins, a streak of acidity and punctuated by flavours of cassis, violets, spice and leather. The best examples can age for the long-term. Although Cabernet does often require blending with Merlot, Cabernet Franc or Shiraz to fix the hole it has in its middle palate.
