This Pacherenc is a complete and complex wine. I defy anyone to say it is not delicious. Yes it is a sweet wine, but the way it is made means you can leave it in the fridge for weeks and it will not oxidise. You just have to try it.

100% Petit Manseng which has been late harvested but not affected by botrytis. This has a similar flavour profile to the Pacherenc sec (not surprisingly!) but is medium sweet and quite lush. Brilliant drinking with lovely refreshing acid to keep it clean and tidy.

Andrew Jefford describes Alain Brumont (responsible for Chateau Montus and Chateau Bouscassé)  as ‘the Citizen Kane of Madiran’ for his ability to build an empire and disagree with almost everyone he comes into contact with!

Service

Keep it in the fridge and pour a glass as required. I’ll warm up and change and then you’ll be ready for another glass. This will stay fresh in the fridge for weeks. But it is only 500ml so will struggle to last days.

Food Matches

Mons selected Bleu des Causses blue cheese worked so well (see Richmond Hill). But try it on its own, as a starter or with seafood.

Pacherenc du Vic Bihl

Sharing the same boundaries as Madiran, this region only makes dry and sweet white wines. It is a region on the improve and the best wines are textural, complex and satisfying to drink.

Petit Manseng

Its small berries and thick skins make some lovely textural and exotically fruited whites either dry, off-dry or sweet
