Blanchot is often the most delicate and understated of the Grand Cru wines. But with time the perfume and fruit evolve and grow. The old vines of Billaud Simon add an extra level of dense fruit and intensity with the white stones and zesty acid being highlights on the palate. Very long and elegant. Drink after 2027 with a crab salad.

The 2017 Chablis Grand Cru Les Blanchots Vieilles Vignes has gained in tension since I tasted it from barrel, and today, the wine displays a pretty bouquet of crisp peach, white flowers, orange rind and anise without the musky nuances it revealed 12 months ago. On the palate, it’s medium to full-bodied, broad and layered, with a ripe core of fruit and a saline finish. Billaud Simon

In my opinion, Billaud Simon is one of the must-have producers in your cellar. I love their delicate and understated nature but they are ripe enough that you can drink them young. Definitely wines of terroir which is great because they hold some of my favourite vineyards too.

Chablis

The Kimmeridgian soils that make Chablis taste like Chablis is evident in these wines. They have more definition of region and more structure than a Petit Chablis but without the fruit weight and intensity of the better sites. Great wines for drinking young or youngish.

Chardonnay

The grape that you can plant anywhere, in any climate and do anything to and it will still taste like an OK wine. When people hit the sweet spot of site, climate, cropping and winemaking, Chardonnay becomes a magical wine that will age gracefully but charm you at any age. Chardonnays can range from cool-climate lean and citrusy to warmer climate tropical and overt. Oak and lees can add flavouring as can malolactic fermentation.
